mapo tofu

one thing I didn't expect from doing brand deals was getting pushed out of my comfort zone to try new ingredients :) This time, with the sauces sent to me I made my very very beloved mapo tofu from scratch. mapo tofu is basically a savory flavor bomb with soft and comforting textures, and it's so easy to make. I had so much fun replicating familiar flavors with sauces I've never worked with before. I don't think I would have picked out these ingredients on my own, since Im mostly just a confused korean girl in the chinese sauce aisle πŸ™‹πŸ»β€β™€οΈ

this recipe was so good, I made a tub of it (as you can see) and packed it for lunch 3 days in a row :)

Ingredients

  • Mapo Tofu (3 servings)

  • 1/2 cup ground pork

  • 1 Tbsp green onions

  • 2 Tbsp water..

  • 1 box soft tofu

Sauce

  • 1 Tbsp Oyster Sauce

  • 2 Tbsp Chili Bean Sauce

  • 1/2 Tbsp Sesame Oil

  • 1 Tbsp sugar

  • 1 Tbsp cornstarch + 2Tbsp water

  • 2 tsps minced garlic

  1. Mix the sauce ingredients (oyster sauce, chili bean sauce, sesame oil, sugar) first

  2. cut tofu into small cubes

  3. saute garlic, ginger, and scallions in oil + chili oil until fragrant

  4. add ground pork, and stir fry until cooked and Add sauce (), stir fry. evenly coated with sauce. add 2 cup water, and simmer.

  5. add tofu, simmer 6 minutes. add cornstarch water to thicken.

  6. serve with rice

add these sauce ingredients first:

  • 1 Tbsp Oyster Sauce

  • 2 Tbsp Chili Bean Sauce

  • 1/2 Tbsp Sesame Oil

  • 1 Tbsp sugar

set it aside

Cut the soft tofu into cubes, carefully so they don’t break

saute garlic, ginger, and scallions in oil + chili oil until fragrant

add the pork (1/2 cup) and saute until cooked

add all of the sauce

once everything simmers, add 2 cups of water

then, carefully add the tofu.

be careful so the tofu holds its shape :)

once it simmers again,

add the cornstarch, mixed in cold water

once the mapo tofu is thick and nice, add the leftover green onions (scallions) for the color

serve over rice.
