Homemade Granola

How much do you let other people tell you what you can or can’t do?

Lol well this is a silly example. but I shied away from making my own granola for the longest time because i heard once, from somebody I considered a good cook that granola is a pain to make. And then years later, another friend posted on instagram how much she loves making her own granola. I messaged her and she sent me her recipe, saying it was so EASY. And ever since, i’ve never even touched store bought granola. I loved it so much I also started giving them out to my neighbors and friends :) So if you’ve never done it, let me be that friend who tells you- it's easy.

Also, granola makes such a great gift. one, it seems impressive, but it's actually very easy. two, you can customize it to someone's preferences and allergies. three, it quickly becomes gourmet, bougie, and thoughtful when you pick the best and organic ingredients. So gift it for your loved ones, including yourself :) here's what barely even is a recipe, because all you need is to remember the temperature and time. After that, the ingredients and spices are all up to you.

Ingredients - makes about 3 regular mason jar-fulls

  • 4.5 cup rolled oats

  • 1/2 cup pumpkin seeds

  • 1/2 cup almonds, chopped (sliced almonds can burn easily)

  • 1/4 cup chia seeds

  • 1/2 cup chopped walnuts

  • 3-4 Tbsp honey

  • 2 Tbsp coconut oil (or canola oil)

  • pinch of salt

  • 1/2 tsp cinnamon

  1. Oil your pan with canola oil or melted coconut oil.

  2. add the oats, almond, pumpkin seeds, chia seeds, walnuts (or your choice of nuts)

  3. Drizzle 4-5 Tbsp of honey (adjust to taste), coconut oil, pinch of salt, some cinnamon

    • (or, if you like extra spice be creative! experiment with nutmeg, small amounts of cayenne or paprika powder)

  4. Mix until everything is evenly coated

  5. Spread everything thin on the pan. Use multiple pans if necessary, the thinner the layer the better.

  6. Bake at 350°F, 25-30 minutes until golden brown. half way through, give it a good stir (I skip this sometimes, it still turns out fine) . At the 25 minute mark, keep an eye on it so it doesn’t burn.

  7. Take out of oven, let cool and transfer to a jar or airtight container and store in a cool place up to 6 months.

    • If you want less clumps, stir the granola while it cools. If you want clumpy granola, break the granola apart after it hardens in the pan.

  8. Enjoy with some greek yogurt and fruits!

I would keep an eye on them from 25 minutes so they don’t burn.
